and I missed Menu Plan Monday again. I am such a scatterbrain lately!
We are having Devlin speech evaluated and our coordinator just left after setting up his evaluation for next week, we're also having his hearing checked even though I think he is fine in that area. I really think he's ok with his speech also but it's better to have it checked now if something is wrong.
So onto my menu for this week...
- Roasted Chicken from the store (grocery night)
- Parents house (Mom made beef stew)
- Turkey Sausage on homemade whole wheat buns (turned out decent)
- Breakfast (whole wheat pancakes, turkey bacon and scrambled eggs)
- Tomato Basil Fish (Saving Dinner cookbook) and Roasted Asparagus
- Shredded Pork Tacos

I'm reading Grave Secrets now and I still have The Fortune Tellers Daughter and Scarpetta left from last weeks library trip. I also picked up Books 3-6 in the Chronicles of Narnia.

I finally finished something! It's a new month which means a new Pimp My Page Challenge at PeppermintCreative.com by me that should be posted sometime in the next few days. Miss Mint is having issues with her computer so I'm sure she'll put it up as soon as she is able to. Here is the layout that inspired the template, it's simple but that's all I have to give right now. ;) I'm hoping that this will jump start my creativity for more pages than I've done the past few months.

We ate out on Friday night, My dad made Chicken and Dumplings on Saturday (Family) night and we will have breakfast one night like usual (It really is a frugal meal to throw together homemade whole grain pancakes, eggs and turkey bacon).

My baby girl is turning 4 on Tuesday. I can't believe it's that time again already. We picked up some cupcakes at Kupcakz on Saturday to have with my parents but of course I can't not make something for her on Tuesday also so I decided to make Devils Food Cake Cupcakes with Strawberry Buttercream Frosting and a strawberry fanned on top. Really hoping the frosting turns out yummy since the last one I attempted didn't. lol Present wise we went to Build A Bear on Saturday and she picked out a Hello Kitty to make and my mom bought her a Barbie Laptop. She picked out presents last week while Grandpa Mike and Grandma Karen were in town. She is getting a new doll (it's what she asked for) and clothes from us and another package is in route from Nana. No party but I figured this will be the last year I can really get away with a cheap birthday before we have to start inviting friends and putting some thought into her birthday. lol
One of her presents from Grandma Karen last week was a responsibility chart. We are giving her 10 cents per magnet and right now she has 5 things to do a day, we are giving her another 10 cents if she completes a full week. 2 are definite, Brush Teeth and Get Ready For Bed. We also have No Whining, Be Nice and Pick Up Toys. She can make up to $4 a week but it looks like it will be running in the $2 mark if she continues like last week. Looking at this now it seems like a lot of money for a 4 yr old. lol This can go towards toys she's wanting and sweets (only 1 on grocery day or I'm sure she would fill a basket with candy and cookies).

Sunday- Chicken & Noodles
Monday- Pork Chops and Applesauce with Salad
Tuesday- Spicy Roasted Chicken Legs and not sure what I'm making with it.
Wednesday- Baked Citrus Fish with Red Potatoes (not sure how yet)
Thursday- Bourbon Chicken with Broccoli

I kept it pretty simple this week. We didn't go to my parents house like we normally do since they had a retirement party to go to.
Friday- Went to a bbq at one of the schools that Matt takes sport pictures for
Saturday- Pork Chops with broccoli and brown rice
Sunday- Wasn't feeling great so Matt made us egg, ham and cheese sandwiches
Monday- I have Chicken in the crockpot for Crockpot White Corn Tortilla Chicken Tacos
Tuesday- Baked Chicken with onions, garlic and rosemary
Wednesday- Crockpot Brown Sugar Chicken with Pasta
Thursday- leftovers or sandwiches

Lots of chicken recipes going on, didn't mean to do that. lol I found this site Super Cook while blog surfing one day and for the most part I love it. It does have some quirks when it comes to what cut of chicken you want to use I've noticed it puts all chicken recipes in the mix when you put chicken breast in your list but that's ok..I can work with it. What this site does is you put what you have on hand into the "your kitchen" area and it comes up with recipes from ingredients you already have in your pantry. So I think it will really help on weeks I need to cut back and use what is in my pantry. I love it!
No scrapbooking this week really. I've made some designs for onesies that I'm giving as gifts and I am supposed to be making Matt a design for his business shirt. I bought 2 canvases that I want to decorate for my living room. I finally finished my curtains in the kitchen. Matt fixed our outside drain that was flooding our patio. We picked up portable dvd player finally that we are going to use as our new dvd for the house as well as trips in the car. It was a pretty productive weekend and I don't see it ending for a few days. Have some painting to do, first I'm painting my pantry doors with chalkboard paint and then my oven hood is getting sprayed black with appliance paint.
I'm sure I'll be back later this week...
I can't believe I forgot to take a picture yesterday. It's only the 9th day of the year and I already messed up. lol Well I did take a picture on Tally's kidizoom VTech camera yesterday of her and I do need to upload her pictures so maybe that can count towards my Project 365 pic. lol Just need to find that usb cord! Matt took our 24-70 lens in to be looked at cause it isn't focusing well. So I hope to see that back semi soon even though I prefer the 50 and unfortunately he is starting to like it too.
Ok I found the cord to my camera and hooked it up to hers...vox won't accept the picture...it's jpg what the heck?!? lol
I think I'm going to change Meal Planning day to Friday since that is really when I do it. I've been looking at my fav foodie blogs and my cookbooks to find what I want to make this next week and have a few ideas already. Tonight is still my Philly Cheese Chicken Sandwiches going to start on those as soon as Matt and Tally get back. I need some ideas for lunch... for me not the kiddo. Tally is fine with her pb&j's or mac-n-cheese! Today I had a sweet potato with light butter spread and brown sugar. Pretty much cause I didn't have anything else that sounded good. lol
I'm going to continue to try and save that picture and get it up on here and think about what todays pic will be. Be back laterzzz!
I've seen this around some blogs I read (most recently CityMama) and although I do my meal planning/shopping on Friday's I figured I could try and get most of my weekly plan on here.
Monday- Homemade Pepper Steak (thin sliced round steak, onions, pepper and Campbells beef consume) with Brown Rice. It's been a while since I've made this and never really had a recipe for it I'll probably add some lite soy sauce to taste.
Tuesday- Pot Roast with Rich Tomato Gravy (from the Slow Cooking Woman's Day Special...I'll add this recipe tomorrow) and Mashed Red Potatoes
Wednesday- Philly Cheese Chicken Sandwiches (my friend got this at a local diner and it just looked delish so I decided to try this myself) I have chicken I'm going to cut into thin slices and cook with mushrooms, onions and peppers...then put that on a nice roll with choice of cheese.
Thursday- Chicken Penne with smoky chili cream sauce (Family Circle recipe, will post after I've made it)
Friday- usually decided Thursday night but I'm going to try and get my parents to watch the kids this night so Matt and I can go out to dinner.
Saturday- Family night (parents house and mom is cooking so no clue what it'll be)
Sunday- Not sure yet
