I have a little bit of me time while Tally is at school and Devlin is napping. I'm slowly getting things organized around here and getting things to run a little smoother. Who knows when I'll actually get the whole house decluttered and organized but at least I'm working on it! I've also been taking my exercise seriously this week and I'm determined to make it a habit this month!!
Tally is loving school. They take afternoon naps before they come home and she's always been cranky when woke up from naps at home, apparently things have not changed just because she's in school. The teacher says she's fine all day until they wake her from her nap, we've picked her up teary eyed several days last week and once so far this week. I'm not to concerned about it since she's fine up until after the nap. The teacher will start sending behavior charts home on Friday and I'm hoping we never have any issues with this.
I have a few book sitting in front of me, none of which I've started reading. I wanted to show the books but vox books area doesn't seem to be working today so I'll just name them.

Tally is doing great. Getting ready for school to start next month.
I went to my doctor the week before last and am still waiting for my test results. I'm not expecting them to be great but I'm hoping they are at least decent. Will post when I get them.
I've been in a funk the past few weeks, maybe even a month. I haven't been exercising or wanting to get out much. Talking to a friend I decided I needed to make myself exercise and maybe it will get my spirits up too. So I just finished my 18 min walk at home video, 3 days in a row so far. It's a start since I haven't been doing anything the past few weeks and I can definitely feel it. I guess I should just be happy my weight stayed the same during my "break" lol So far I am feeling better. I have a scrapbook crop tomorrow night, thanks Lisa for inviting me. I desperately need to get out of the house away from the kids. It's rare I get away from both for anything longer than a trip to the grocery store or getting my hair done. ;)
Devlin is doing well. He passed his hearing screening but they are going to check him again in a few weeks because he has a bit of ear wax that we might have issues with. We will meet his Speech Pathologist on Tuesday and start his therapy. I'm excited to see how much she can help him!

I've been slacking on my reading a bit. I just finished Lethal Legacy the night before last and started on Bare Bones yesterday (1/3rd of the way through so far). Right now I'm looking into getting a container garden book. They are all checked out at the library so I'm thinking about hitting the bookstore on my way to get groceries tonight. Matt and I have really been discussing this since we don't have a lot of space in our court yard between our condo and garage but are wanting to grow a few vegetables this year. Will keep you posted on what we come up with on that one and if you know of a good site or book to research this more...please share! Hope everyone has a nice weekend!
Little post of how the week went.
Devlin had his evaluation for Sooner Start yesterday because of his not saying much. They test for Adaptive, Personal-Social, Communication, Motor and Cognitive. He has to be 50% behind in one area or 25% in 2 areas for them to help. He passed all but Communication which they put at 12m level, not surprising since he only says Mama, Dada, Night Night and Dog at 19 months. This program is free and they come to our house to work with him. The Speech Pathologist that gets assigned to us next week will go over how often we want his/her help (how often we want them to come by) and what we want Devlin to learn. For as long as we would like their help or until he is 3 yrs old. He has his hearing screening on Wed the 22nd to determine if he has any fluid in his ears that is causing him to not hear certain sounds. Will keep you posted on how it goes.

Books I'm reading...
I finally started on Scarpetta which is 500 pg book and taking me a few days when I can fit it in, most likely will finish it tonight.
Then I have these on my nightstand.
and I have this one ready to pick up from being held at the library to finish the series.
I have to get groceries tonight and tomorrow Caramel (our Lhasa Apso) is getting a much needed grooming. It'll be like getting a new dog when he gets home, he'll look totally different.
I think that's all for today. I've been menu planning, just forget to post it on here at the beginning of the week. I'm going to work on keeping that up!
and I missed Menu Plan Monday again. I am such a scatterbrain lately!
We are having Devlin speech evaluated and our coordinator just left after setting up his evaluation for next week, we're also having his hearing checked even though I think he is fine in that area. I really think he's ok with his speech also but it's better to have it checked now if something is wrong.

I finally finished something! It's a new month which means a new Pimp My Page Challenge at PeppermintCreative.com by me that should be posted sometime in the next few days. Miss Mint is having issues with her computer so I'm sure she'll put it up as soon as she is able to. Here is the layout that inspired the template, it's simple but that's all I have to give right now. ;) I'm hoping that this will jump start my creativity for more pages than I've done the past few months.
Tally of course had it first, then Devlin (we think, his only lasted a day) and now me. I haven't been feeling well since Sunday. Lots of laying around sleeping or at least trying as much as you can with 2 kids jumping on your head, literally! ;) Today is the first day I can stand without being dizzy and nauseous after a few minutes. No menu plan this week since I took a few days off, I'm really not sure what I'm making. I just have to say how much I love my husband, he takes such good care of us especially when we are sick. All day Sunday he took care of all 3 of us without me even asking and yesterday he resumed as soon as he got home from work. Now of course he reminded me to do the same next time he isn't feeling well, I'm not always the nicest person after a long day with the kids and then to have a sick husband when all I want to do is rest after he gets home. ;)

20. Did you take medication to ease the pain? Epidural

Multigrain Pancakes
Makes 16 4-inch pancakes
1 cup bleached all purpose flour
1/3 cup each cornmeal, whole wheat flour, and old fashioned oats (for 1 cup total)
3 tsp sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 1/2 cups low fat buttermilk
1/2 cup low fat milk
2 large eggs
2 T oil (I use canola)
1 tsp vanilla extract
oil to brush on griddle
Heat a large nonstick skillet or griddle over low heat while preparing batter.
Mix flour, cornmeal, whole wheat flour, oats, sugar, salt, baking powder, and baking soda in a medium bowl. Microwave buttermilk and milk together in a 1- quart measuring cup to room temperature, 20-30 seconds. Whisk eggs, oil, and vanilla into the buttermilk and milk. Pour wet ingredients into dry ingredients and whisk until just mixed. Return batter to measuring cup, stirring in a tsp or so of water, if necessary, to make a thick but pourable batter.
Increase heat to medium and lightly brush skillet or griddle with oil. When oil starts to spread out but before it starts to smoke, pour in batter, 1/4 cup at a time, working in batches, if necessary, to avoid overcrowding. When pancakes bottoms are golden brown and tops start to bubble, 2-3 mins, flip pancakes and cook until golden brown on remaining side. Repeat, brushing skillet or griddle with oil as needed. Serve hot.
Spicy Roasted Salmon
4 servings
2 tsp light brown sugar
4 tsp chili powder
1 tsp ground cumin
1/4 tsp cinnamon
salt and pepper to taste
4 (5 oz) salmon filets
Preheat oven to 400°
In a small bowl, combine spices and rub over the salmon. Place the salmon in an 11x7 inch baking dish coated with cooking spray. Bake for 12-15 minutes or until the salmon flakes easily with fork.
Weekly Diabetes update...
Chicken & Bok choy with Soy Sesame Flavoring (recipe to follow)
Anything that the family can make without me (I'm going to get my hair cut and colored around the time I do dinner)
I am making the Soy Sesame flavoring with chicken tenders and bok choy
1 1/4-1 1/2 lbs of chicken breast cut into strips (I'm using chicken tenders)
1 lb of Bok Choy
Flavoring ingredients:
3 T oil
4 garlic cloves, minced
1/4 c soy sauce
2 t rice wine vinegar
2 t toasted sesame oil
1 t hot red pepper flakes
1 tsp sugar
Adjust rack to lowest position and heat oven to 500°
Gently toss chicken with flavoring and vegetable in a large bowl. Divide mixture among 4 approximately 18x12 inch sheets of heavy duty foil, arranging meat atop the vegetables, each in a more or less single layer. Bring long sides of foil together, fold over about 1/2" and crimp to seal. Repeat folding and crimping twice more. Fold ends in twice to seal completely. Set foil packets on a large baking sheet and bake for 15 mins or until done. Remove from oven, let stand for 3 mins, and serve.
In Diabetes news...
I had my first Hypoglycemia issue. After breakfast today I exercised for about 15 mins with the 10 Minute Solutions Carb Burner dvd. I checked my BS and it was 113, 2 hrs after I started eating. An hour later I was in the kitchen putting the ingredients for a loaf of bread in my machine and I started shaking so I immediately checked my BS again and it was 65. So I had grabbed a few reese's cups from the pantry and started feeling fine about 15 mins later. So glad my body gave me a clue that something was off. I had a yummy asian salad with shredded chicken, peanuts, carrots, english cucumber, little bit of chow mein noodles, dried pineapple, red cabbage and salad greens plus soy sesame dressing for lunch also from the Pam Anderson book mentioned above and my BS was 119 when I checked it a few mins ago. Other than fasting my numbers have been good. We'll see Thursday if she wants me to stick with what I'm doing and see if it comes down.
It's been a few days so I figured it was time for an update. My blood sugars are slowly going down still. My fasting number was 139 this morning and it gives me hope that I might be able to stay off of insulin. It still needs to go down a bit more but I'm not at full dose of my medicines yet and it seems to go down 10-20 every few days. My numbers after meals are doing pretty good, within 112-167 which isn't the best but I'm still trying to find how certain foods effect me. Last night was the 167 and I ate a snack while making dinner instead of after I took my after lunch number which was the 112, so by the time I was making dinner I was feeling funny and ate a small snack which I didn't include in my dinner carb count. I should know better. lol
